Be prepared for a few unexpected surprises...(We had to replace and replaster the ceiling due to an old water leak we didn't know about.)Don't exceed your budget with tempting gizmos and gadgets that are offered by today's cabinet makers (They can eat up your budget quickly.) Shop around, get estimates, and ask friends and neighbors for recommendations for reliable professionals to do the things that you will not be able to do on your own. Find out about the local requirements for permitting, and what services need to be done by professionals in order to comply with local zoning ordinances. As for the dark paneling, ask at a home improvement store, paneling can be sealed and painted with good results. Good Luck!
Also, the cabinets are faced with panelling that are painted white and the appliances, especially the wall ovens are really old and don't heat properly.
