I encouraged the homeowners to cut directly on their built-in wood island top. I did not have to twist any arms, this is a working kitchen! Prep is done directly across from the range, but I try to keep traffic out of cooks way, so the trash cabinet is on the opposite side of the island, for others to use. The cook simply lifts the 'lid' in the counter to wipe directly into the trash below.
