Can I do an undercounter sink on a maple chopping block or will the exposed cut edge at the sink turn grey?

Great question! I was hesitant to see under-mount sinks installed with butcher block counter tops, but I have seen many examples of this with no problems if the wood was well sealed to prevent the wood from absorbing water.
