I am replacing a 36 inch stove with a 30 inch stove, leaving a 6 inch gap ...any thoughts on making the most of that 6 inch space?

You be able to find a 6" width cabinet to fill that space. You would then use it for cookie sheets and trays. You might have to have your cabinet company create something.
